Cheeseburgers with Special Sauce

Make these as cheeseburgers or just good ole regular hamburgers. Here's a simple recipe for game day including the key component -- the special sauce.

INGREDIENTS:
3 lbs chuck roast, freshly ground OR buy patties pre-formed
Slabs of cheddar or American cheese
salt/pepper to taste
Buns - the potato buns have a great flavor…
1 Vidalia sweet onion chopped
½ Iceberg lettuce chopped
FOR SPECIAL SAUCE:
1 cup mayo
½ cup relish - dill or kosher
Deli style mustard - perhaps a teaspoon
2 tsp apple cider vinegar
2-3 garlic cloves, crushed
1 tsp onion powder
1 tsp paprika

METHOD:
1) Mix all ingredients and let sit in fridge for an hour so the flavors blend together.
2) I start by getting out the grinding attachment to the big mixer. Grinding your own beef really does MAKE A HUGE DIFFERENCE in the flavor and the softness of the burger. I buy about 3 lbs and grind the chuck roast on the largest setting of the attachment. I grind it through once only. I usually use 2/3rds of a cup of beef and form into a patty with a hamburger press.
3) Then I season each burger with a little salt and pepper before cooking. Grilling outside is best - but inside in a non stick fry pan or griddle flat top works great in bad weather. Don’t forget the cheese.
4) I like to toast the buns first and then layer the burger with toppings. You can make a little toppings bar with lettuce, tomato, pickles, onions, bacon, avocado or fried egg perhaps. We tend to do the double beef patties with all the fixings.
